Instructions:

  2. Cut the beef (or chicken or tofu) into thin, bite-sized pieces. Season with salt and pepper.
  3. Slice the carrots, bell pepper, and onion into thin strips. Cut the shiitake mushrooms into thin slices. Chop the garlic.
  4. Blanch the spinach in boiling water for 30 seconds, then rinse it under cold water and squeeze out any excess water.
  5. In a large skillet, heat some vegetable oil over high heat. Add the beef (or chicken or tofu) and stir-fry for 2-3 minutes, or until it is cooked through. Remove the meat from the skillet and set it aside.
  6. In the same skillet, heat some more vegetable oil over medium heat. Add the garlic and stir-fry for 30 seconds, or until fragrant. Add the vegetables (except for the spinach) and stir-fry for 3-4 minutes, or until they are slightly softened.
  7. Add the cooked glass noodles, meat, and blanched spinach to the skillet. Add 2 tablespoons of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of sesame oil. Stir-fry everything together for 2-3 minutes, or until the sauce is evenly distributed and the noodles are heated through.
  8. Serve the japchae hot, garnished with some sesame seeds and sliced green onions.

Tips:

  • Sweet potato glass noodles can be found in most Asian grocery stores. If you can’t find them, you can substitute with regular glass noodles or vermicelli.
